We would pair it with veal cutlets and scalloped potatoes. The vines grow on poor, rocky limestone soil, producing wines with singing minerality. The wine is vinified in sandstone amphorae, with a small addition of sulfites. The mouthfeel is packed with flavor and salinity and is not to be missed by lovers of Loire Valley white wines.
