Bénédicte et Stéphane Tissot Vieilles Vignes Arbois Poulsard, 2023 (1.5L) poire honey and oak that predominate100% Poulsard from two separate vineyard sites at higher altitudes. The 60 85 year old vines are planted by selection massale. The wine is spontaneously fermented with native yeasts and goes through a lengthy maceration before being aged for three months in extremely old barrels. This wine is pure and lengthy, and packs a bigger punch for such a light bodied grape. Pair it with chicken thigh congee with lots of ginger.
